CHEESE'S COMPOSITION

* What are the nutritional values of cheese?

Nutritionally, cheese is an especially interesting food. Like milk, it is vital to calcium intake. In addition to calcium and protein, cheese is an excellent source of vitamins.

Moreover, the fat in cheese is high in fat-soluble vitamins (A, D, E and K), with vitamin D being vital to assimilation of calcium.

* How much fat is there in cheese?

Cheese loses water as it ages. Therefore its fat content is expressed as a percentage not of the total weight, but of the dry extract, i.e. what is left when all the water has evaporated. So, the more water there is in a cheese, the lower its actual fat content is to the fat content on the packaging, which is a percentage of the dry weight.

* Where can you buy rennet?

Rennet is sold by selected pharmacies, herbalist shops and farming cooperatives.
